Unfortunate Mom Moment & a Recipe

Well, I must be getting old. Yesterday morning I finally got around to taking a shower during Little Guys nap and was puttering around in the bathroom afterwards and finally decided to pick up my PJs off the floor. Sooo.... when I stood up with my underwear (seriously all I had in my hand) I totally hurt my back! I have no idea how it happened... I have never had back problems before. I almost couldn't straighten up! It is still sore today and although it seems fine most of the time, every time I do something that requires bending over and standing back up it gets me. I think that means I get a laundry-free day, don't you? All that bending to get clothes out of the hamper and standing up to throw them in the washer is definitely bad for my health. =) The girls at work told me it's probably from being pregnant (hello... it's been a whole year!), but I suppose they are probably right - it's the most back straining thing I've ever done - carrying a baby for 9 months.

Anyway... onto the recipe part. So... I usually only work 2 or 3 days a week. I usually work the evening shift at the hospital so that my husband is home with our son, while I'm at work and vice versa. I don't think I'd enjoy that routine if I worked full-time, since I'd never see my husband, but it's not bad a couple days a week.

Well, the other evening girl sprained her knee earlier this week, so I'm picking up some extra shifts and am working Wednesday-Sunday. The question of course is: what's for dinner? The Working Girl (even the part-time one) cannot live without the Crock-Pot. It is a life-saver and a must-have. Who knows what my husband would come up with to feed our son if I didn't plan something out on those nights I'm at work. Sooo... here is one of our favorites and it would work for girls who work a regular day shift also:

Buffalo Chicken Dinner
4 frozen skinless, boneless chicken breast halves
2 cups BBQ sauce (your favorite variety!)
1/2 (1 oz) package dry ranch salad dressing mix
2 tablespoons butter
6 crusty rolls, split lengthwise (or hamburger buns)

Combine and Cook:
  1. Place the frozen chicken breasts into a slow cooker, and pour in 1 1/2 cup of BBQ sauce (add a little water if your BBQ is very thick) and the ranch dressing mix. Cover and cook on Low for 7 to 8 hours.
  2. Once the chicken has cooked, add the butter and shred the meat finely with two forks.
  3. Pile the meat onto the hoagie rolls, and splash with the remaining BBQ sauce to serve.
The leftovers from this are WONDERFUL on a pizza to make a buffalo chicken pizza. I love this recipe because I  don't even have to remember to thaw the meat before I throw it in the pot - it couldn't be more simple. I usually try to plan hamburgers or something either a few days before or a few days after to use up the other half of that package of ranch mix. Just mix it in with the hamburger meat before you form your patties - Yum!
